Ghee for a Lighter Touch

With butter, it's all fat, all of the time. Doesn't mean you should never eat it (unless you chose the vegan path), but if you want to try something a bit lighter on the fats, with a toasty, roasty flavor, well ghee is just the ticket. You can prepare it in a fairly large quantity and it stays fresh for weeks, without refrigeration. Demonstrated by the lovely ladies from Show Me the Curry.
